Shark Skin Graters
Used by sushi chefs in Japan for centuries, this is an essential tool for grating wasabi root. Rough textured sharkskin is mounted on a wooden board and the sharkskin enables the wasabi to be grated to a much finer consistency and a better resulting flavor. The grater is easy to use; you simply rub the wasabi root over the grater and scrape off the paste. These graters also work well for ginger, garlic and shallots.
