Takeshi Saji Knives

What Makes Takeshi Saji Knives Special

Takeshi Saji knives are the result of more than forty years of experience and craftsmanship. Master Saji, based in Takefu City in Fukui Prefecture, continues the Echizen Uchi-Hamono tradition, an art form that has defined Japanese blade making for centuries.

Each knife is hammer forged using traditional methods that combine strength, balance, and precision. The SG2 Diamond Damascus line is hand-forged from high-performance powdered carbon steel, known for holding an exceptionally sharp edge. These super-thin blades feature a slim profile from handle to tip, allowing for effortless cutting and remarkable control.

Every Saji knife is fitted with a polished cow-bone handle that feels comfortable in the hand and adds a striking contrast to the patterned steel. Available in Gyuto, Petty, and Sujihiki, Saji’s Japanese knives bring together beauty, balance, and functionality. Each knife is a one-of-a-kind work of art, forged to last a lifetime and designed for chefs who value both precision and artistry.

Caring for Your Takeshi Saji Knife

With the right care, a Saji knife will maintain its performance and appearance for many years. Always hand-wash your knife with mild soap and warm water, then dry it completely with a soft towel. Avoid leaving the blade wet or washing it in the dishwasher, as this can cause corrosion or damage to the handle.

Saji’s SG2 steel is a powdered high-carbon stainless steel that combines durability with corrosion resistance. It is comparable in quality to premium steels such as VG-10, Aogami Super and HAP40. While it is less prone to rust than traditional carbon steel, applying a light coat of camellia oil or mineral oil from time to time will keep the blade in its best condition.

When it comes time to sharpen, use a Japanese whetstone to preserve the blade’s original angle and geometry. Regular honing will help maintain the edge between sharpenings. Store your knife safely on a magnetic strip, in a knife block or in a sheath to protect the blade.
